The Polish Ministry of Agriculture documents Kiełbasa krakowska sucha as a coarse-ground, smoked, baked and dried sausage. The longer EU GTS name is Kiełbasa krakowska sucha staropolska. This recipe serves the packaged ready-to-eat product and gives no home curing or drying instructions. Use a protected designation only when the product label confirms it.

  1. Check the sausage labelConfirm the product name, use-by date, storage directions and handling statement. Use only a package labelled ready-to-eat. Set aside any product that says it must be cooked before eating.

  2. Prepare the apple and picklesWash the apple under running water and dry it. Core and slice it shortly before serving. Drain and slice the pickled cucumbers. Use clean equipment and keep the ready-to-eat sausage away from raw meat and unwashed produce.

  3. Portion the bread and sausageSlice the rye bread into four 50 g portions. Weigh 50 g sausage for each serving. Leave the casing on unless the package says otherwise. If needed, slice the sausage with a clean knife on the clean board.

  4. Assemble four servingsArrange the sausage over each portion of bread. Add 40 g apple and 30 g pickle alongside each serving. Measure 5 g mustard into a small lidded cup for each person. Keep the moist ingredients and mustard separate from the bread until serving.

  5. Keep the snack at a safe temperatureAfter opening, follow the package directions. If the sausage label requires refrigeration or a prepared component is perishable, transport and hold the portions in an insulated cooler with an ice pack. Refrigerate perishable foods within 2 hours, or within 1 hour when the temperature is above 32.2 °C / 90 °F.
