Chairo for a gathering — Urubamba: celebration-style preparation
Chairo may be made in a sizeable pot for a table of guests. This celebration-style Urubamba interpretation retains both beef and lamb, and scales up wheat, dried potato and the vegetables in a balanced way.
Nothing in the method assumes a documented local holiday custom. The occasion is reflected in the eight-serving yield, the paired meats and careful distribution of potatoes and corn into every bowl.
A broad, heavy pot prevents crowding and makes steady simmering easier. Slow heat allows the meat fibres to soften without driving away too much broth; add the smaller vegetables only after the grains have had their full cooking time.
