About Fonduta valdostana
The official Valle d’Aosta tourism recipe uses a concise formula: Fontina DOP, whole milk, butter and egg yolks. The cheese is cubed and soaked in milk for at least two hours before cooking.
The fonduta is not boiled. Gentle bain-marie heat allows the Fontina to melt while the yolks thicken the emulsion without curdling.
Texture is the central test. Finished fonduta should flow in a thick ribbon and cling to bread rather than separate into oil and stringy cheese.
Serve it immediately, traditionally with toasted bread; the same fonduta can also accompany polenta or seasonal vegetables.
