About Canederli allo speck
South Tyrol’s official tourism recipe presents canederli allo speck in brodo as a traditional soup and gives a concise four-serving formula based on 150 g stale bread, onion, butter, 80 g Speck, eggs, flour, milk and parsley or chives.
The bread must absorb the egg-and-milk mixture before shaping. A 15-minute rest is not optional filler time: it lets dry cubes hydrate and gives flour and egg enough time to bind the mass.
A test dumpling is the most useful quality control. If it opens in the cooking water, the mixture needs a little more flour or a longer rest; if it is dense and rubbery, it has been compressed too hard or overloaded with flour.
The dumplings are poached gently rather than boiled violently. They need about 20 minutes to cook through while keeping their rounded shape.
For broth service, they are lifted from the cooking water and placed in a good hot meat broth. The verified images show three dumplings in clear broth with chives and sliced speck nearby.
