Miến gà
Miến gà pairs Vietnamese glass noodles with chicken and broth. Vietnam’s tourism authority includes miến with chicken among Hanoi’s familiar noodle dishes, while the exact toppings and starch used for the noodles can vary. This home version follows the Hanoi-area direction in the ranked list and keeps the broth clear and gently seasoned.
Poached chicken gives the broth a clean, savory base. Shiitake adds depth, wood-ear brings a gentle chew, and scallion, coriander and rau răm make the bowl bright. Thin miến dong is a useful choice when available; thin mung-bean glass noodles also work, though their package may call for a different soak or cooking time.
Cook the noodles in a separate pot and assemble each bowl just before serving. That small step keeps them springy instead of letting them swell in the broth. This is one practical home expression, not a claim that every Hanoi cook prepares miến gà in exactly the same way.
