Serbian potato musaka with minced meat and egg-milk topping
Musaka od krompira is the Serbian potato form of a casserole whose name travels widely across the Balkans and eastern Mediterranean. Here the identity is practical rather than ornamental: thin potato slices form the structure, a paprika-seasoned minced-meat layer provides savoury depth, and an egg-and-milk topping binds the upper layers into a lightly browned finish.
The potatoes are used raw rather than parboiled in this version. That saves a separate pot but makes slice thickness critical. At about 3–4 mm, the pieces can soften during the covered first bake without turning to mash. A mandoline can make this easy, but a sharp knife is enough if the slices are kept consistent.
Mixed beef and pork give the filling a balance of beef flavour and pork fat. The meat is cooked before the casserole is assembled, not relied on to cook inside the potato layers. That gives better control over browning, removes excess raw-meat liquid and allows the ground-meat safety temperature to be checked before it is enclosed in the dish.
The first oven phase is covered because potatoes need trapped steam as well as oven heat. At the end of those 40 minutes, the top layer should be nearly tender before any egg mixture is added. Pouring the topping over firm potatoes and hoping the last few minutes will solve them usually produces the opposite result: a dark top over an undercooked centre.
Egg and milk are added only for the finishing bake. They seep into the spaces between potato slices and set into a thin savoury custard rather than a thick sauce. Because the topping contains egg and the dish is a casserole, the centre is brought to 74 °C; a golden surface alone does not prove the middle has set safely.
The final rest is part of the texture, not dead time. Fresh from the oven, the custard and potato starch are still fluid enough that a neat slice can collapse. Ten minutes allows the layers to settle while the dish remains hot, producing portions that show potato, meat and topping distinctly.
