Rímac-inspired celebratory ceviche with cancha — a practical household adaptation
Peruvian ceviche is served on everyday tables and at gatherings. This celebratory platter uses that broader context rather than a distinct festival formula tied to one Rímac celebration. The larger quantity of corvina and three accompaniments make it convenient for several diners.
The dressing remains intentionally direct: fresh lime, ají limo, salt, red onion and cilantro. Cooked camote and choclo are cooled before service, while cancha, Peru’s toasted corn, is kept dry until the last minute. This preserves the distinction between the juicy fish and its starchy, crunchy sides.
Six people can be served from one large platter if the fish is mixed in a chilled bowl immediately before eating. Dressing the fish early will not make it safer; proper supplier controls and cold handling matter throughout preparation.
