Ferreñafe-inspired home ceviche with zarandaja and camote — a practical household adaptation
For a home lunch that follows northern coastal patterns, cold lime-dressed fish can be served with already-cooked beans and sweet potato. This Ferreñafe-inspired home version places a simple northern ceviche beside beans and camote, without prescribing one uniform family formula.
Cabrilla provides a mild white fish centre. Cooked zarandaja adds bean texture, and peeled camote is simmered until tender, cooled and plated without touching the raw fish until serving. Red onion, ají limo and cilantro keep the dressing sharp and aromatic rather than heavy.
Using pre-cooked beans avoids an unmentioned overnight soak or long bean-cooking period. They must be fully cooked and chilled before use. Prepare everything before opening the fish container; lime does not eliminate the underlying raw-seafood hazard.
