Ceviche — Miraflores, seasonal version — measured ingredients and method

Miraflores is a coastal district of Lima, where ceviche is an established part of the city’s food repertoire. This seasonal home rendition uses a firm white fish approved for raw service, fresh ají limo and market sweet potato and choclo. The term seasonal signals shopping flexibility, not an officially codified Miraflores calendar.

Red onion is cut thinly so it mingles with the fish without concealing the cubes, and lime is pressed gently to limit bitterness from the rind. Ají limo delivers a sharp aromatic heat while coriander brings a fresh finish. The cooked sweet potato and corn are kept on the side, not stirred into the raw fish.

The fish is not cooked by citrus, regardless of how opaque its edges become. The final mix happens in a cold bowl after every other ingredient is ready. Temperature control, appropriate supplier practices and immediate service are fundamental to this raw preparation.

Ingredients

Ingredients

Raw fish and fresh dressing

  • 650 g firm lean white fish fillet suitable for raw serving; skinless and completely boneless; obtained from a reputable supplier who can confirm appropriate parasite controls, kept at or below 4 °C
  • 160 ml fresh lime juice; strained and refrigerated
  • 170 g red onion; raw; to be cut into very thin feather slices
  • 16 g fresh ají limo chili; whole and fresh; stem and remove seeds, then chop
  • 18 g fresh coriander (culantro); fresh leaves, to be finely chopped
  • 8 g garlic; raw cloves to be finely grated
  • 5 g fine salt; measured for fish dressing

Cooked sides and crunch

  • 500 g yellow sweet potato (camote); peeled and cut into 3 cm pieces
  • 320 g fresh Peruvian choclo kernels; removed from cob, weighed
  • 2000 ml water for boiling the side vegetables; measured; discarded after boiling

Method

  1. Boil the sweet potato.Put the peeled 500 g sweet potato pieces in a saucepan with 1200 ml water. Bring to a simmer, then cook for 23 minutes. Drain and spread the pieces on a clean shallow tray. The sweet potato yields to a knife but retains neat pieces on the plate. Keep the cooked sides separate from raw fish during their later cooling period.

  2. Boil the choclo. In a second saucepan, bring the remaining 800 ml water to a boil. Add the 320 g choclo kernels; cook gently for 15 minutes, drain into a clean shallow tray. The kernels are tender when bitten and keep a distinct plump shape.

  3. Cool the cooked sides safely.Spread the cooked 500 g sweet potato, 320 g choclo in shallow clean containers and refrigerate for 60 minutes, keeping uncooked fish separately cold. The containers must not be left on the counter to cool. The cooked sides have cooled through and are no longer warm enough to heat the raw-fish plate. Allow 60 minutes passive chilling for this step. Keep at 4 °C or below once chilled.

  4. Prepare the cold flavourings. With a clean vegetable board, cut 170 g red onion into fine plumes; finely chop 16 g ají limo and 18 g coriander, and grate 8 g garlic. Put each in a separate cold bowl. The onion slices are thin enough to bend, and the chili and coriander are finely cut without being mashed. Allow 12 minutes for this step.

  5. Squeeze and chill the lime.Gently squeeze enough clean limes for exactly 160 ml strained juice, avoiding scraping the bitter pith. Chill the juice while preparing the fish. The juice is free of pips and large pulp fragments. Allow 4 minutes for this step.

  6. Dice and hold the fish cold.Using a sanitized raw-seafood board and knife, cut the 650 g boneless fish into 2 cm cubes. Put it in a cold bowl over ice at or below 4 °C. Do not leave the fish on a warm worktop. The fish pieces are cleanly cut, firm and cold to the touch, with no strong or sour smell. Allow 7 minutes for this step. Previously frozen/appropriately parasite-controlled fish is still raw and can contain harmful microbes.

  7. Dress the ceviche just before eating.Toss the chilled fish with all 5 g salt and 8 g grated garlic, then pour over exactly 160 ml lime juice. Fold in 16 g ají limo, 170 g red onion and 18 g coriander. Mix gently for 2 minutes only; do not leave it to stand in the citrus. The fish is evenly dressed and moist, with onion and coriander distributed rather than crushed. Lime juice does not cook, pasteurize or make raw fish safe.

  8. Plate and serve immediately.Arrange the cooled sweet potato and choclo beside the ceviche and divide among 4 adult servings. Eat at once; do not hold assembled ceviche for later. The fish remains cold, the root vegetables hold their shape, and crunchy sides stay dry. Allow 3 minutes for this step. This uncooked fish preparation is not appropriate for pregnant people, young children, older adults or immunocompromised people.

Practical

Practical

Success points

Fish for this dish is served raw. The seller must confirm that raw service and applicable commercial parasite controls are appropriate. Cook, drain and cool root and corn sides before the raw fish leaves the refrigerator. Cut fish just before serving and give the lime mixture only a brief final fold; extra soaking is not a safety treatment.

Practical guidance

The choice of fish may change as availability changes, but the fishmonger must still confirm it is appropriate for raw serving and the freezing history where required. Cool the cooked sweet potato and corn before plating them next to fish. Do not leave cut fish or squeezed lime waiting on a warm counter while the sides cook. For the seasonal Miraflores plate, a trusted supplier and appropriate commercial handling are necessary but do not eliminate raw-fish risk. Keep the refrigerator at 4 °C or below, sanitize the raw-fish board, and mix only the amount that can be served immediately. Neither lime juice nor extra time in the bowl makes this a cooked dish. The 650 g of raw fish in the Miraflores seasonal preparation must not be held as leftovers in lime for the following day. You may prepare the cooked sides separately in advance and refrigerate them, but do not make the completed raw-fish salad in advance. A different fish may have different fat, tenderness and parasite-control requirements.

Control points

Control points

  • Fish pieces turn soft and raggedToo much stirring or long contact with acid. Use the 2 cm dice, stir gently and serve straight away after the two-minute final mix.
  • Cooked sides warm the raw fishThey were plated while still steaming. Cool and refrigerate the boiled vegetables before arranging them beside ceviche.

Allergens and food safety

Allergens and food safety

Allergen: fish. Any purchased plantain crisps or roasted corn should be checked for ingredient labels and shared-facility cross-contact. The seasonal Miraflores ceviche contains uncooked seafood. Buy from a reputable fish seller who can verify suitable raw-use conditions and appropriate commercial parasite-control steps where necessary. Keep the fish at or below 4 °C, separate knives and boards and serve without delay. Lime juice can change texture but does not reliably kill bacteria or parasites. Freezing reduces some parasites and does not eliminate microbial hazards. Pregnant people, young children, older adults and immunocompromised people should not eat this raw-fish preparation. A separately cooked fish dish reaching 63 °C at the thickest part is safer, but is a different preparation.
