Kakamoukou — Mahoran Spicy Lemon Fish Broth
Kakamoukou, also written kakamoku, belongs to the cuisine of Mayotte in the Indian Ocean. It is commonly described as a fish soup or light broth sharpened with chilli and lemon, with onion and garlic at its aromatic base. Tomato appears in some Mahoran descriptions and is used here in a restrained amount for body and acidity.
The broth is intentionally not coconut-heavy. Onion, garlic and chilli soften in a small portion of the measured water instead of oil, then tomato and the remaining water simmer briefly. The result should stay light enough for the fish and lemon to remain the focus rather than reading as a thick generic curry.
Firm red snapper fillet is cut into 5 cm pieces and added only at the end. Large pieces survive the simmer better, and low heat protects the flesh from breaking apart. A thermometer gives the safety endpoint: the thickest piece reaches 63 °C while still flaking in moist sections.
Lemon juice goes in after the fish is cooked, which keeps its aroma bright and avoids prolonged acid exposure. Rice, tubers or green banana can be served alongside in the Mahoran meal context, but they remain optional accompaniments and are excluded from the base nutrition calculation.
