Baked Pacific Oysters with Butter-Dijon Crumbs

Pacific oysters are widely cultivated along the British Columbia coast. This home-style baked version uses three oysters per appetizer portion and a restrained topping of buttered crumbs, Dijon mustard and parsley. A shallow layer keeps the oyster flavour in front while the crumbs turn golden.

Overview

Baked Pacific Oysters with Butter-Dijon Crumbs

The method follows a documented Vancouver Island preparation, scaled for four. Shuck the live oysters safely and return each one to its clean lower shell. Bake at 230°C for at least 10 minutes, then check the flesh for the safe 74°C endpoint; the topping colour alone is not a safety check.

Practical

Practical

  • Buy live oysters from a reputable retailer; shells should be closed or close when tapped, and keep the shipper tag.
  • Protect the shucking hand with an oyster glove or a thick folded towel, and open each oyster over a bowl.
  • Use a coarse-salt bed or crumpled foil to keep the shells level so the liquor and topping stay in place.

Method

  1. Step 1Buy live oysters from a reputable retailer and keep them below 4°C in an open tray that catches drips, covered with a damp cloth on the refrigerator's bottom shelf. Discard cracked shells and oysters that stay open after tapping.

  2. Step 2Heat the oven to 230°C. Spread the coarse salt in a rimmed baking dish, or arrange crumpled foil so the half-shells can sit level without tipping.

  3. Step 3Scrub the oysters under cold running water. Protect your hand with an oyster glove or folded towel; shuck each oyster over a clean bowl, keeping the meat and liquor in its lower shell and discarding the top shell.

  4. Step 4In a small bowl, mix the breadcrumbs, Dijon, parsley, melted butter, fine salt and black pepper until the crumbs are evenly moistened.

  5. Step 5Set each clean lower shell on the prepared tray. Divide the crumb mixture among the oysters, about 1 teaspoon per oyster, without pressing the topping down.

  6. Step 6Bake at 230°C for at least 10 minutes, until the topping is crisp and the oysters are bubbling. With a clean thin-tip thermometer, check the thickest oyster flesh; it must reach 74°C. Bake in short extra intervals and recheck if needed.

  7. Step 7Use clean tongs to move the hot shells to a heatproof platter. Keep the raw-oyster bowl, tray and utensils separate from cooked oysters until they have been washed and sanitized.

  8. Step 8Serve immediately with lemon wedges. Refrigerate leftovers promptly in a shallow covered container, use within 2–3 days and reheat to 74°C; discard perishable food left out over 2 hours at room temperature or over 1 hour outdoors in hot summer weather.

Serving

Choose oysters of similar size so they cook evenly. Keep live shells cold and open them just before baking; set a stable board on a damp towel and hold each oyster securely in a folded towel while inserting the knife. Save the liquor in the lower shell. The coarse salt is only a support bed and is not served. Wash hands and sanitize the knife, bowl, tray and work surface after raw-oyster handling.

Control points

Control points

  • If a live oyster is cracked or will not close when tapped, discard it; do not try to make it safe by baking.
  • If the crumb is still pale after the oysters reach 74°C, do not extend baking just to brown it; serve once the safe endpoint is reached.

Allergens and food safety

Allergens and food safety

Contains oysters (molluscs/shellfish), milk from butter and mustard from Dijon. Breadcrumbs may contain wheat/gluten; check the label and declare wheat when present. Buy oysters from a reputable retailer and retain the shellfish shipper tag. Keep live oysters below 4°C in an open, drip-catching tray under a damp cloth; discard cracked shells and oysters that stay open after tapping. Keep raw juices separate from ready-to-eat food. Wash hands and clean and sanitize the oyster knife, bowl, utensils and work surfaces after shucking; do not reuse raw-oyster plates for cooked oysters. Bake at 230°C for at least 10 minutes and cook the flesh to 74°C, checking with a clean thermometer where it can be positioned safely. People at higher risk of foodborne illness should avoid raw or undercooked shellfish. Refrigerate leftovers promptly in a shallow covered container, use within 2–3 days and reheat to 74°C. Discard perishable food left at room temperature over 2 hours or outdoors in hot summer conditions over 1 hour.

FAQ

FAQ

Can I bake the oysters for less than 10 minutes?

No. Bake at 230°C for at least 10 minutes and check that the oyster flesh reaches 74°C. If it has not reached that temperature, continue in short intervals and check again.
