Slatko od ruža — fragrant rose petals in a flowing lemon sugar syrup
Slatko od ruža is a spoon sweet in which fragrant rose petals are suspended in a clear sugar syrup. The petals are the defining ingredient, so their identity and growing conditions matter as much as the cooking. Use only positively identified edible rose petals from plants that have not been sprayed with pesticides; florist flowers and ornamental roses of uncertain treatment are not suitable for eating.
The white base of a rose petal can taste bitter, and trimming it gives a cleaner floral profile. The petals are gently rinsed rather than crushed, then simmered in water before the sugar goes in. During this stage they soften and lose some of their fresh colour. Lemon juice then sharpens the flavour and helps the syrup return to a brighter appearance without turning the dessert into a citrus preserve.
Syrup concentration is the main technical decision. Slatko should be thick enough to cling to a spoon and surround the petals, but it should still flow. Boiling it to a firm jam stage produces a dense result after chilling and increases the chance of crystallization. A cooled spoonful that falls in a thick continuous ribbon is a practical stopping point.
The finished slatko requires refrigeration rather than an unvalidated room-temperature storage method. After cooking, the mixture is cooled promptly in a shallow clean container, transferred to covered containers and held at 4 °C or below for no more than 3 weeks. Portions can be frozen for longer storage and thawed in the refrigerator.
Serve slatko od ruža in small quantities. A 50 g portion is enough to show the perfume of the petals and the body of the syrup without overwhelming the palate with sugar. Bringing the portion out of the refrigerator a few minutes before serving allows the floral aroma to become more noticeable while the rest remains safely chilled.
