Overview

Sopa wantán with pork dumplings and chicken broth

In sopa wantán, the filled parcels matter at least as much as the broth. Pork, ginger and spring onion make a moist but compact filling, while thin wheat wrappers cook rapidly. The dumplings should be sealed well enough that they can float freely without releasing their centre.

The broth needs flavour but not opacity. Purchased unsalted chicken stock makes a workable base; garlic, ginger and spring-onion whites provide aromatic depth without requiring a long stockpot preparation. Chinese cabbage becomes tender while retaining a little structure.

Keep uncooked filling cold and work with a few wrappers at a time so their edges do not dry. The chicken added to the soup and pork inside dumplings have different safety endpoints. Check a representative dumpling through its centre and the largest chicken strip before serving.

Ingredients

Ingredients

Wantans

  • 20 pieces wheat wantan wrappers, approximately 10 cm square; 20 pieces
  • 240 g minced pork, refrigerated until assembly
  • 12 g cornflour, for pork filling
  • 20 g spring onions, green parts, minced for filling
  • 10 g fresh ginger, grated for filling
  • 12 ml soy sauce, for filling
  • 30 ml water, for sealing wrappers

Soup

  • 1500 ml unsalted chicken stock, ready to cook
  • 200 g boneless skinless chicken breast, thinly sliced
  • 180 g Chinese cabbage, cut into strips
  • 45 g spring onions, whites sliced and greens held for serving
  • 15 g fresh ginger, sliced
  • 10 g garlic, sliced
  • 18 ml soy sauce, for broth
  • 8 ml sesame oil, to finish

Method

  1. Mix the filling. In a chilled bowl combine the 240 g pork, 12 g cornflour, 20 g minced green spring onions, 10 g grated ginger and 12 ml soy sauce. Stir until cohesive; keep cold. Time: 7 minutes. Readiness: The filling holds together on a spoon instead of separating into wet clumps. Wash hands and disinfect the counter after handling raw pork.

  2. Fold twenty wantans.Lay out the 20 wrappers in small groups. Put one twentieth of the pork mixture in each centre, moisten edges using the 30 ml water and press firmly into triangles with sealed sides. Time: 15 minutes. Readiness: There are no visible air gaps or exposed filling at the seams.

  3. Fragrance the broth.Bring the 1500 ml stock to a gentle simmer with 15 g sliced ginger, 10 g garlic and the white pieces of the 45 g spring onions. Time: 8 minutes. Readiness: The broth smells lightly aromatic and bubbles gently without turning cloudy.

  4. Cook the chicken.Add the 200 g chicken strips and simmer, checking that the largest strip reaches at least 74 °C. Time: 5 minutes. Readiness: The chicken pieces hold their shape and are tender when pierced. Mandatory safe endpoint: 74 °C. Use a clean thermometer, not the colour of the broth.

  5. Cook dumplings and greens.Lower in the 20 wantans separately and add the 180 g cabbage. Keep at a steady simmer for 7 minutes. Check that the centre of a representative pork filling reaches 71 °C. Time: 7 minutes. Readiness: The wrappers look silky, float freely and the cabbage is soft at the leaf but lightly firm at the stem. Mandatory safe endpoint: 71 °C. Ground pork filling must reach 71 °C at the centre.

  6. Season the soup.Add the remaining 18 ml soy sauce and 8 ml sesame oil, scatter the spring-onion greens into the pot and ladle five wantans per bowl with chicken and cabbage. Time: 2 minutes. Readiness: The filled dumplings remain intact and the broth is clear enough to see the vegetables.

Serving and storage

Portion five wantans into each of four deep bowls and distribute the chicken and cabbage evenly. Cool unused soup promptly in shallow containers and refrigerate at or below 4 °C for up to 2 days. Reheat fully to at least 74 °C; wrappers soften if stored in broth.

Substitutions

The filling may be chicken rather than pork in other chifa versions but then its safe temperature is 74 °C. Commercial wrappers vary in egg content; check the label if allergy matters.

Control points

Control points

  • CheckPossible cause — If the wrappers open, too much filling or dry edges are likely; use less filling and press seams closed.
  • CheckPossible cause — If the broth turns cloudy, boiling too hard may have broken wrappers; keep only a gentle simmer.
