Québec Maple Taffy (Tire d’érable)
At a cabane à sucre (sugar shack), hot maple syrup poured over snow is one of the classic ways to enjoy the sugaring-off season. The syrup is concentrated by boiling until it reaches a soft, pliable taffy stage, then cooled quickly on a bed of packed snow or crushed ice and wound around a stick. The French name used here is tire d’érable. Québec’s French-language terminology distinguishes pure maple-syrup taffy from tire à l’érable, a blend that can include glucose; this recipe contains only pure maple syrup.
