Xôi miền Bắc
Xôi is steamed glutinous rice served in many forms across Vietnam. In coastal Quảng Ninh, the pairing of plain white xôi with chả mực—hand-pounded, fried squid or cuttlefish cakes—is a familiar Hạ Long breakfast. This recipe uses fresh cuttlefish, a little pork backfat, aromatics and glutinous rice flour for a practical home version. It represents one local expression of northern xôi, not a single formula for every northern region.
Pounding most of the cuttlefish until tacky helps the cakes hold together; folding in some finely chopped pieces preserves a springy bite. Keep the seafood cold while working, and dry it well so the mixture does not turn loose. Steam the rice separately and fry the cakes just before serving. The plate is simple: warm, fragrant white rice with golden, savory seafood cakes.
