Overview

Nem nướng Nha Trang (Nha Trang grilled pork skewers)

Nem nướng is a grilled pork specialty associated with Khánh Hòa, particularly Ninh Hòa and Nha Trang. Seasoned pork paste is grilled on skewers, then wrapped with rice paper, herbs, vegetables and noodles. A Nha Trang-style platter may also include crisp fried rice paper and a thick golden-orange dip. Sauce formulas vary by household and shop; this practical version thickens ground pork with glutinous-rice porridge and tomato paste.

Keep the pork cold while processing and shaping so it binds into a springy skewer instead of crumbling. A grill pan works at home, while charcoal adds smoke. Because the pork is ground, colour alone cannot show it is safely cooked; check the centre with a thermometer.

  • Keys to successChill the pork and fat until firm at the edges before processing. Process until the paste is pale and tacky, then keep it cold. Shape 12 equal skewers so they cook evenly. Turn often because honey and sugar brown quickly; confirm 71°C at the centre. Fry the rice paper one sheet at a time and cool it fully for crisp shards.
Ingredients

Ingredients

Pork skewers

  • 500 g boneless pork shoulder, with some fat, cubed
  • 50 g pork back fat, cubed (omit if the shoulder is well-marbled)
  • 30 ml fish sauce; 25 g sugar; 15 ml honey
  • 12 g garlic, finely grated; 16 g tapioca starch; 2 g ground white pepper
  • 5 ml neutral oil for the sauce

Thick dipping sauce

  • 50 g glutinous rice, rinsed; 400 ml water
  • 150 g ground pork; 30 g tomato paste; 6 g minced garlic
  • 22 ml fish sauce; 12 g sugar; 20 g roasted unsalted peanuts, crushed

Wrapping platter

  • 20 round rice-paper sheets, about 22 cm (16 for rolls, 4 for crisp shards)
  • 120 g dry rice vermicelli (bún); 150 g soft lettuce leaves
  • 75 g mixed herbs such as mint, perilla and coriander
  • 200 g cucumber, thinly cut; 150 g green banana, peeled and thinly sliced
  • 100 g drained pickled carrot and daikon
  • 250 ml neutral oil for shallow-frying the 4 rice-paper sheets

Method

  1. Rinse the glutinous rice and simmer covered with 400 ml water on low until very soft and porridge-like, 35–40 minutes. Stir occasionally; cool while preparing the pork.

  2. Spread the pork shoulder and back fat in one layer; freeze until firm at the edges but not solid, about 35–40 minutes. Process with fish sauce, sugar, honey, garlic, tapioca starch and pepper until pale, cohesive and tacky. Keep cold.

  3. With lightly oiled hands, divide into 12 portions and press each around a skewer into a short, even sausage. Cover and refrigerate 20 minutes.

  4. Heat 5 ml oil in a saucepan. Cook the ground pork and minced garlic, breaking up the meat, until no pink remains. Stir in tomato paste, rice porridge, fish sauce and sugar. Simmer 10 minutes, then blend carefully until thick and smooth. Keep hot or cool promptly and refrigerate.

  5. Heat a lightly oiled grill or grill pan to medium. Grill the skewers, turning every 2 minutes, until browned and cooked through, usually 10–14 minutes. Check that the centre of the thickest skewer reaches at least 71°C; timing varies. Transfer with clean tongs.

  6. Heat 250 ml frying oil in a small pan. Fry 4 rice-paper sheets one at a time until crisp and lightly golden; drain and break into shards. Cook the vermicelli as directed on its packet, drain and cool. Arrange lettuce, herbs, cucumber, banana, pickles and noodles on a clean platter.

  7. Serve 3 skewers per person with the 16 sheets and platter. Wrap sausage, noodles, herbs, vegetables and a crisp shard, then dip in warm sauce. Sprinkle peanuts over the sauce or pass separately.

  8. Refrigerate cooked pork and sauce within 2 hours in shallow covered containers at or below 4°C. Use leftovers within 3 days; reheat once to 74°C throughout.

Practical tips

Soak skewers if their maker recommends it. Use moderate grill-pan heat because honey browns fast. Prep vegetables and sauce ahead, but fry rice paper close to serving.

Troubleshooting

Loose pork paste: it may have warmed up. Chill it briefly, then shape with clean lightly oiled hands. Skewers brown too fast: lower the heat, turn often and verify 71°C inside. Sauce too thick: blend in a little hot water; if thin, simmer a few minutes longer.

Frequently asked questions

Can I cook these without a barbecue? Yes. Use a lightly oiled grill pan over medium heat, turn frequently and check with a thermometer. Is the crisp component a fried spring roll? No. It is fried rice paper; the pork is grilled on skewers. Can I prepare parts ahead? Yes. Refrigerate sauce, shaped raw skewers and washed produce separately. Grill and fry close to serving.
