Practical

  • Tips for successSimmer the chicken gently instead of boiling hard; check the thickest breast and inner thigh with a thermometer. Toast the rinsed rice briefly with turmeric and aromatics before adding hot chicken broth for separate, fragrant grains. Keep the chicken broth hot for both the rice and the accompanying soup, and reserve the measured rice portion first. Serve the nước mắm gừng separately so everyone can add the salty, sweet, sour and ginger notes to taste.
Ingredients

Ingredients

Poached chicken and broth

  • 1.3 kg whole chicken, giblets removed
  • 2.5 L water, plus a little more only if needed to cover the chicken
  • 25 g fresh ginger, sliced
  • 60 g shallots, peeled and halved
  • 10 g fine salt, for the poaching liquid
  • 3 g fine salt, for the side broth
  • 10 g spring onion, sliced, for the side broth

Turmeric rice

  • 400 g fragrant jasmine rice, uncooked
  • 25 ml neutral vegetable oil
  • 12 g garlic, minced
  • 30 g shallot, minced
  • 2 g ground turmeric
  • 550 ml strained hot chicken broth
  • 4 g fine salt

Quick pickle

  • 100 g carrot, peeled and cut into fine matchsticks
  • 150 g daikon, peeled and cut into fine matchsticks
  • 60 ml rice vinegar
  • 60 ml water
  • 15 g granulated sugar
  • 2 g fine salt

Nước mắm gừng

  • 45 ml fish sauce
  • 60 ml water
  • 30 ml fresh lime juice
  • 30 g granulated sugar
  • 15 g fresh ginger, finely grated
  • 8 g garlic, finely minced
  • 3 g fresh red chili, thinly sliced (optional)

Method

  1. Toss the carrot and daikon with 60 ml rice vinegar, 60 ml water, 15 g sugar and 2 g salt. Set aside for at least 15 minutes, then drain lightly.

  2. Put the whole chicken in a large stockpot with 2.5 L water, 25 g sliced ginger, 60 g halved shallots and 10 g salt; add a little more water only if needed to cover. Bring just to a boil, lower to a gentle simmer and poach, turning once, until a thermometer inserted away from bone in the thickest breast and inner thigh reads at least 74°C. This usually takes about 45–55 minutes for a 1.3 kg bird, but temperature is the safety check. Do not judge doneness by color alone.

  3. Lift the chicken onto a clean tray and rest for 10 minutes. Strain the broth through a clean fine-mesh sieve. Measure 550 ml for the rice and keep the remaining broth hot for serving. When the chicken is safe to handle, shred it into bite-size pieces and discard the bones. Keep raw-chicken utensils separate from cooked food.

  4. Rinse the jasmine rice until the water is mostly clear, then drain thoroughly for 10 minutes. Heat 25 ml oil in a heavy saucepan; sauté 30 g minced shallot and 12 g garlic until fragrant. Add the rice and 2 g turmeric; toast for 2 minutes, stirring to coat the grains.

  5. Add 550 ml hot chicken broth and 4 g salt to the rice. Bring to a simmer, cover tightly and cook on low for about 15 minutes, or use a rice cooker’s white-rice setting. Turn off the heat and leave covered for 10 minutes; fluff gently.

  6. For the nước mắm gừng, stir 30 g sugar into 60 ml water until dissolved. Mix in 45 ml fish sauce, 30 ml lime juice, 15 g grated ginger and 8 g garlic. Add 3 g sliced chili if desired. Taste for a balanced salty, sweet, sour and ginger flavor.

  7. Rinse and dry the rau răm and cilantro. Arrange the cucumber, bean sprouts and drained pickle on a clean platter. Warm the remaining strained broth, season it with 3 g salt and finish with 10 g spring onion; reserve the other 15 g for the rice bowls.

  8. Divide the turmeric rice among four bowls, top with shredded chicken and the remaining spring onion. Serve with herbs, cucumber, bean sprouts, pickle, individual bowls of hot chicken broth and nước mắm gừng. Refrigerate leftovers in shallow containers within 2 hours at or below 4°C; use within 3–4 days and reheat chicken, rice and broth to 74°C.

Practical guidance

The whole bird is cooked gently so its broth can flavor both components. If the breast reaches 74°C before the inner thigh, continue simmering and recheck both locations. Skim the broth if needed, then strain it before measuring the rice portion. Keep the rice covered after cooking so it finishes steaming evenly. For a milder sauce, omit the chili; keep the lime, ginger and fish sauce amounts measured.

Troubleshooting

The chicken seems dry: avoid a hard boil, use the thermometer and stop poaching once both tested areas reach 74°C. The rice is wet or clumpy: drain it thoroughly after rinsing, toast it briefly, and measure the 550 ml broth precisely. The pickle tastes too sharp: drain it lightly before serving and use it as a crisp accompaniment rather than mixing it into the rice. The dipping sauce tastes too salty: add a little water or lime juice; fish-sauce brands vary in saltiness.

Frequently asked questions

Can I cook the rice in plain water? You can, but chicken broth gives the rice its savory depth and is part of this Phú Yên-style version. Measure the broth after poaching and straining the chicken. Is the chili required? No. Chili is optional in the measured nước mắm gừng; serve it on the side or omit it for a milder sauce.

Allergens and food safety

Allergens and food safety

For diners at higher risk of foodborne illness, omit raw sprouts or cook them thoroughly; rinsing cannot remove pathogens that may be inside the seeds. Contains fish (fish sauce). No dairy, egg, soy, wheat, peanuts or shellfish are used as written; check packaged fish-sauce labels for cross-contact. Keep raw chicken refrigerated at or below 4°C and separate from produce and ready-to-eat foods. Wash hands and sanitize boards, knives, tongs and the thermometer after handling raw chicken. Cook the whole bird to at least 74°C in both the thickest breast and inner thigh, checking away from bone. Keep reserved broth hot for service. Refrigerate chicken, rice, broth and cut produce in shallow containers within 2 hours at or below 4°C; reheat chicken, rice and broth to 74°C.

To finish

To finish
