Cá lóc nướng trui — Mekong Delta straw-grilled snakehead
Cá lóc nướng trui is named for its direct-fire cooking style: a whole snakehead is traditionally skewered and roasted in burning rice straw. Vietnam’s National Authority of Tourism lists it among the distinctive dishes enjoyed around Trà Sư in the Mekong southwest. Household details vary, and some rustic versions cook the fish unscaled. This recipe scales and cleans the fish so you can check the flesh directly and serve it easily; it is one practical home version, not a claim that every family cooks it the same way.
The accompaniments make the meal flexible. Tear off warm, flaky fish and wrap it with lettuce, herbs, cucumber and rice vermicelli in softened rice paper. Nước chấm brings salt, sweetness, lime and garlic to each bite. A little scallion oil adds fragrance without masking the fish. Keep the seasoning simple before grilling: the straw smoke and the fish itself should remain the focus.
