Cá tai tượng chiên xù — crispy whole giant gourami from Bến Tre
The Vietnamese name cá tai tượng chiên xù describes giant gourami fried until its outer scales puff and crisp. It is associated with the Mekong Delta, and tourism sources in Bến Tre list it among local specialties. The visual contrast is part of the appeal: crisp golden exterior, moist fish inside, and cool herbs and vegetables at the table. Local cooks use different sauces; some favor tamarind, while ginger fish sauce is another documented pairing. This version serves a ginger-lime nước chấm alongside the fish rather than pouring it over the crisp surface.
The whole fish is traditionally left unscaled for this presentation. Drying it thoroughly and scoring the thick areas helps control splatter and lets heat reach the flesh. At the table, lift away the crisp exterior as desired and wrap flaky fish with lettuce, cucumber, herbs and rice vermicelli in rice paper. Keep the dip in a separate bowl so the crust stays crisp until each bite.
