Bánh canh ghẹ Vũng Tàu (Crab Rice-and-Tapioca Noodle Soup)

This Vũng Tàu coastal soup pairs thick, springy bánh canh noodles with sweet swimming-crab meat, fish cake and a savory broth. Here, pork bones, dried shrimp and cooked crab shells build a clear, deeply flavored stock; a little tapioca starch gives it a light gloss.

Bánh canh ghẹ Vũng Tàu (Crab Rice-and-Tapioca Noodle Soup)

Regional bowls vary. Some use coconut milk, crab roe, whole crab or extra seafood. This measured home version keeps the broth clear and lightly thickened, with crab meat and sliced fish cake as the toppings.

Practical

Practical

  • Tips for successThaw frozen crabs overnight in the refrigerator; keep them cold and separate from ready-to-eat ingredients. Cook crab until the thickest body meat reaches 63°C and looks firm, pearly and opaque. Size changes the steaming time. Strain the broth after the shells simmer. Cook the noodles in a separate pot so their starch does not cloud or over-thicken the soup. Add the tapioca slurry gradually; the broth should lightly coat a spoon, not turn into gravy.

Method

  1. If using frozen crabs, thaw them overnight in the refrigerator, never on the counter. Rinse the pork bones. Blanch them in boiling water for 5 minutes, then drain, rinse and clean the pot.

  2. Return the bones to the pot with 2.8 litres of fresh water, dried shrimp, onion, daikon and ginger. Bring just to a boil, skim, then simmer gently for 60 minutes.

  3. While the stock simmers, steam the cleaned crabs in a covered steamer. Cook until the shells turn red-orange and the meat is firm, pearly and opaque; check the thickest body meat with a clean probe and reach at least 63°C. The time varies with crab size, usually about 12–18 minutes. Rest the crabs for 10 minutes on a clean tray, then pick the meat and roe, if present. Reserve the cooked shells.

  4. Add the cooked shells to the stock and simmer for 15 minutes. Strain the broth, discarding the bones, vegetables, dried shrimp and shells. Return it to the pot and season with 15 ml fish sauce, salt, sugar and white pepper.

  5. Heat the oil in a small skillet. Sauté the shallot and garlic for about 1 minute, until fragrant. Add the picked crab meat, roe if present, 10 ml fish sauce and black pepper; toss gently for 1–2 minutes. Keep covered and hot.

  6. Whisk the tapioca starch with 60 ml cold water until smooth. Bring the broth to a gentle simmer and stir in the slurry gradually, stopping when the broth is glossy and lightly coats a spoon. Simmer for 1 minute. Add the sliced fish cake and heat until steaming hot throughout.

  7. In a separate pot, cook fresh or thawed bánh canh noodles according to the package directions, until tender, springy and translucent. Drain and keep hot.

  8. Divide the noodles among four warm bowls. Top with crab meat and fish cake, ladle over hot broth, then garnish with scallions, cilantro and fried shallots. Serve lime wedges and optional chilli at the table. Refrigerate leftovers within 2 hours at or below 4°C, use within 3 days and reheat to 74°C.

Practical guidance

Fresh and frozen bánh canh noodles vary in thickness, so follow their package cooking time and stop when they are tender but still springy. Cooking them separately keeps the broth from becoming gluey as the bowls wait. If using pasteurized picked crab meat instead of whole crabs, simmer clean crab shells from a fishmonger in the broth for flavor and stir the meat in near the end until piping hot; the result will be less crab-forward. The broth can be made a day ahead. Strain it, cool it promptly in shallow containers, cover and refrigerate at or below 4°C. Reheat to 74°C before serving. Keep lime, herbs and fried shallots separate until the bowls are assembled.

Troubleshooting

The broth is too thick: add hot water or unsalted stock a little at a time. The broth tastes starchy: simmer it for another minute after adding the slurry, or thin with hot stock. The noodles turn soft: cook them separately and drain as soon as they are tender and springy. The crab is difficult to pick: let it rest for the full 10 minutes and use kitchen shears around the joints.

Frequently asked questions

Can I use store-bought bánh canh noodles? Yes. Fresh or frozen rice-and-tapioca noodles work well; cook them separately according to the package directions. Does Vũng Tàu bánh canh ghẹ always contain coconut milk? No single broth is universal. Coconut-milk versions are documented, while other accounts describe a clear, lightly thickened seafood broth. This recipe uses the latter style.
