  • Tips for successPoach the chicken fully before chilling; verify 74°C at the thickest part without touching bone. Let the chicken dry uncovered on a rack in the refrigerator. Damp skin can splatter in hot oil and will not crisp as well. Use a stable high-sided pan, keep oil below one-third of its height, and lower chicken away from you with long tongs. Ladle oil over the skin with a long-handled metal ladle behind a splatter screen; keep your face and hands back.
Ingredients

Ingredients

Chicken and poaching broth

  • 1.2 kg bone-in, skin-on chicken thighs, about 4 large thighs
  • 2 L water
  • 25 g fresh ginger, sliced, and 30 g scallions, halved
  • 12 g fine salt

Tomato-tinted chicken rice

  • 300 g dry jasmine rice, rinsed
  • 450 ml strained chicken broth from poaching
  • 15 ml neutral vegetable oil
  • 10 g garlic, minced
  • 25 g tomato paste
  • 2 g fine salt

For crisping the chicken

  • Up to 750 ml neutral vegetable oil for shallow-frying and hot-oil basting; use only enough for a shallow layer

Lime-fish-sauce dip

  • 60 ml water
  • 40 ml fish sauce
  • 30 ml fresh lime juice
  • 20 g granulated sugar
  • 6 g garlic, minced
  • 5 g fresh red chilli, finely sliced (optional)

Fresh accompaniments

  • 200 g cucumber, sliced, and 200 g tomatoes, cut into wedges
  • 100 g lettuce leaves, washed and dried, plus 15 g fresh cilantro leaves

Method

  1. Bring the 2 L water, ginger, scallions and 12 g salt to a gentle simmer. Add the chicken thighs in one layer and poach gently, turning once, until the thickest part away from the bone reaches 74°C. Check with a clean thermometer; timing varies with the size of the thighs.

  2. Transfer the cooked chicken with clean tongs to an ice bath for about 10 minutes. Drain and pat the skin very dry. Set on a clean rack over a tray and refrigerate uncovered for 45 minutes. Keep raw-chicken tools and surfaces separate from vegetables and cooked food.

  3. Measure 450 ml strained broth. Cook the rinsed rice in the broth in a rice cooker or covered saucepan until tender. Spread it on a shallow clean tray to release steam while the chicken dries; do not leave cooked rice at room temperature for more than 2 hours.

  4. Dissolve the sugar in 60 ml water. Stir in fish sauce and lime juice, then add 6 g garlic and optional chilli. Cover and chill until serving.

  5. Heat 15 ml oil in a wide skillet. Cook 10 g garlic briefly until fragrant, stir in the tomato paste, then add the rice and 2 g salt. Fry, breaking up clumps, until hot throughout. Keep warm.

  6. Set a stable high-sided pan on the back burner. Add only enough of the frying oil to make a shallow layer, never above one-third of the pan, and heat to 175–180°C. The chicken skin must be dry. In batches, lower thighs away from you with long tongs, skin-side down. When the skin begins to crisp, turn skin-side up and carefully ladle hot oil over the skin with a long-handled metal ladle. Use a splatter screen and keep your face and hands back.

  7. Turn as needed for even browning. With a clean thermometer, verify each thigh reaches at least 74°C at the thickest part without touching bone. Lower the heat and continue frying if needed. Drain on a clean rack. Divide rice among four plates and serve with one thigh, cucumber, tomato, lettuce, cilantro and the dip.

  8. Refrigerate chicken and rice leftovers separately within 2 hours at or below 4°C and use within 3 days. Reheat both to 74°C. Let frying oil cool completely before disposal; never pour hot oil down a drain.

Practical guidance

The 450 ml of broth seasons the rice gently; reserve any remaining poaching liquid for soup or another use. Freshly cooked rice can be spread on a tray while the chicken dries. For make-ahead prep, refrigerate cooked rice promptly in a shallow covered container and use within a day. Keep the hot-oil pan on the back burner and fry in batches so the oil temperature recovers.

Troubleshooting

The skin stays soft: dry it more thoroughly and leave the chicken uncovered on the rack for the full chilling time. Oil splatters: stop, move back, and let the pan settle; check that the chicken skin is dry before frying. The rice clumps: spread it out to release steam, then break up the clumps gently as it fries. The chicken browns too fast: lower the oil temperature and continue until the centre reaches 74°C.

Frequently asked questions

Why poach the chicken first? It cooks the meat gently before the skin is crisped with hot oil, helping keep the interior tender. Can I use plain rice? Yes. The tomato paste gives this home version a warm colour; the rice can be served without it, though the flavour and appearance will differ.
