About Granita siciliana
Granita is a defining Sicilian frozen tradition and is served through much of the island, often with a warm brioche. Visit Sicily describes lemon as the classic refreshing flavour among a wide range of almond, coffee, pistachio and fruit versions.
Unlike a smooth churned sorbet, home granita benefits from periodic scraping and stirring as the base freezes. That intervention keeps the ice crystals small enough to spoon while preserving the characteristic crystalline texture.
Sugar is structural as well as sweet: too little creates a hard block, while too much prevents the mixture from freezing properly. The ratio here produces a bright lemon granita intended for an ordinary domestic freezer.
