About Svan Kubdari — Georgian Beef-Filled Bread from Svaneti
Two golden, sealed yeast breads hold a warmly spiced filling of finely diced beef, onion and garlic.
Kubdari is a Svanetian filled bread: yeasted dough is gathered around seasoned meat, sealed and baked until the crust browns and the centre turns juicy. In Svaneti the filling is commonly made with beef and flavoured with herbs and Svan salt. Families and villages vary the meat, spice blend and dough.
This version makes two medium round breads for four side portions. Chilled beef chuck is cut by hand into tiny, even pieces, then worked with onion, garlic, coriander, blue fenugreek and savory until the filling holds together. The method keeps the pieces distinct rather than grinding them, while enough mixing helps the raw filling stay evenly distributed inside the dough.
Forest savory known as gitsruli is a characteristic Svan flavour, but it is difficult to find and its identity is described in different ways. Use it if you have it; this measured home version uses dried savory, with a small amount of cumin as a practical substitute when needed. Cumin has a different aroma and should not be presented as gitsruli. The beef-only filling is one documented regional form; pork and mixed-meat versions also exist.
