Caillette is associated with Ardèche and Drôme, where pork, liver or other offal and leafy greens are combined into compact portions and often wrapped in caul fat. This recipe uses pork shoulder for lean structure, pork belly for fat, pork liver for the offal character and Swiss chard leaves for the green component.

The chard is blanched first, then squeezed very firmly. This is not a cosmetic step: wet greens release water during baking and make the meat mixture loose, while properly squeezed greens disperse through the mince without turning the caillette into a steamed parcel. Pork and liver stay at 4 °C or below while being minced and mixed, both for clean texture and for strict raw-offal handling.

Each portion is weighed to roughly 130 g before baking and wrapped snugly in caul fat with the overlap underneath. The caul renders as the caillettes cook, helping them hold a rounded shape and brown. Visual colour is not the safety test.   1. Blanch and squeeze the greens. Blanch the chard leaves in boiling water until wilted, then drain, let them become comfortable to handle and squeeze very firmly before chopping. Continue for about 5 minutes. Temperature target: 100 °C. The leaves are fully wilted and, after squeezing, release very little water when compressed. Removing excess water prevents loose watery caillettes.

  2. Mince and combine the filling. Mince the chilled pork shoulder, belly and liver, then combine with the chopped greens, egg, garlic, parsley, thyme, salt and pepper until evenly distributed. Continue for about 15 minutes. Temperature target: 4 °C. The mixture is evenly mottled with greens and no large pockets of unmixed liver, fat or egg remain. Cold meat handles more safely and minces cleanly. Keep raw pork and liver at 4 °C or below during preparation.

Wrap and bake

  1. Portion and wrap. Divide the mixture into 12 equal portions of about 130 g and wrap each snugly in caul fat, overlapping the membrane underneath. Continue for about 20 minutes. Each portion is compact and fully encased enough to hold its shape, with the caul overlap placed underneath. Equal portions cook at a similar rate.

  2. Bake to a verified centre. Arrange the caillettes in a baking dish and bake until browned and safely cooked through. Continue for about 40 minutes. Temperature target: 190 °C. The caul fat has rendered and the tops are browned. The centre of every caillette reaches at least 71 °C. The internal temperature is the safety control for minced pork and offal. Cook the centre to at least 71 °C.

  3. Rest before serving. Rest the baked caillettes before serving so juices settle and handling is easier. Leave it for 10 minutes. The portions remain intact when lifted and no longer release a rush of hot juice when cut. A short rest improves slicing and serving.
