Sancocho Caqueteño de Gallina de Campo (Caquetá, Colombia)
This sancocho is associated with Florencia in Caquetá, in the Orinoquía culinary region used by Colombia's cultural recipe inventory. Its defining ingredients are country hen, topocho, green plantain, cassava, potato and cilantrón. Keeping both kinds of plantain in the pot gives the broth a rounded flavour while the roots make each bowl substantial.
Country hen needs patient cooking. A gentle simmer gives the meat time to soften and enrich the broth without breaking the vegetables apart. The bird's age and size affect the timing, so use the clock only as a guide: tenderness tells you when the hen is ready, and a thermometer confirms the poultry is safely cooked.
This five-serving version serves plain white rice on the side; the additional accompaniment sometimes mentioned with the dish is not specified here. Add the vegetables in stages: topocho and green plantain first, then cassava and potato, which need less time to become tender.
