Sancocho de pataló from Huila, Colombia
Pataló is a large freshwater fish associated with the Magdalena basin. In Huila, this sancocho pairs it with green plantain, cassava, potato, garlic and hogo, a tomato-and-scallion seasoning base. The vegetables cook in the broth before thick fish steaks are added, helping the fish keep its shape while the broth takes on its flavor.
Pataló has been reported as Endangered in Colombia’s 2012 freshwater-fish Red Book. That dated conservation assessment is not itself a statement about today’s market rules. Buy it only from a recognized seller who can verify legal, traceable supply and current fishery requirements; government guidance lists 35 cm whole as the authorized minimum size. If you cannot verify the fish’s identity and provenance, make a river-fish sancocho with a responsibly sourced alternative and describe it accurately rather than calling it pataló.
