Traditional Hội An Chicken Rice (Cơm gà Hội An truyền thống)

Cơm gà Hội An brings together tender chicken, fragrant rice and fresh Vietnamese herbs. The rice takes its color and savory depth from turmeric and chicken broth, while lime, onion and rau răm give the shredded meat a lively contrast. This version uses bone-in chicken pieces for a manageable home batch, with a quick green papaya and carrot pickle alongside. Hội An recipes and toppings vary, so this is one measured traditional-style version rather than a single fixed formula.

The broth does double duty: it gently cooks the chicken and seasons the rice. A little garlic-scented fat helps coat the grains before the broth goes in; resting the rice after cooking keeps it fluffy. Serve a small cup of broth with each plate, and keep the salad, cucumber and pickle fresh and crisp until serving.

  • Tips for successKeep the poaching liquid at a gentle simmer rather than a rolling boil so the chicken stays tender and the broth clear. Measure the hot broth for the rice; too much liquid can make the grains soft and sticky. Let the cooked rice rest covered for 10 minutes before fluffing it with a fork or rice paddle. Dress the chicken salad shortly before serving so the onion and herbs stay fresh. Check the thickest chicken piece with a thermometer, away from the bone.
Ingredients

Ingredients

Poached chicken and broth

  • 1.4 kg bone-in, skin-on chicken thighs and drumsticks
  • 2.5 L cold water
  • 35 g fresh ginger, sliced and smashed
  • 2 lemongrass stalks (about 50 g), bruised
  • 80 g shallots, halved
  • 10 g fine salt
  • 15 ml fish sauce

Turmeric rice

  • 400 g jasmine rice, rinsed and drained
  • 30 ml neutral oil or rendered chicken fat
  • 15 g garlic, finely chopped
  • 15 g fresh turmeric, finely grated, or 3 g ground turmeric
  • 700 ml strained hot chicken broth

Chicken and herb salad

  • 100 g red onion, thinly sliced
  • 25 g rau răm (Vietnamese coriander) leaves
  • 20 g fresh mint leaves
  • 30 ml lime juice
  • 15 ml fish sauce
  • 8 g sugar
  • 2 g ground black pepper
  • 30 ml water

Quick pickle and serving

  • 200 g green papaya, peeled and cut into matchsticks
  • 100 g carrot, peeled and cut into matchsticks
  • 60 ml rice vinegar
  • 10 g sugar
  • 3 g fine salt
  • 200 g cucumber, thinly sliced
  • 20 g scallions, thinly sliced
  • 5 g fresh red chili, thinly sliced (optional)

Method

  1. Toss the green papaya and carrot with the rice vinegar, 10 g sugar and 3 g salt. Leave for 15 minutes, then drain well.

  2. Put the chicken in a stockpot with the cold water, ginger, bruised lemongrass, shallots, 10 g salt and 15 ml fish sauce. Bring slowly to a gentle simmer, skim the surface, then poach until the thickest meat reaches 74°C / 165°F when measured away from the bone. Lift out the chicken and strain the broth.

  3. Measure 700 ml hot broth for the rice and reserve about 600 ml for four small soup cups. Keep any remaining broth for another use or to adjust the rice liquid if your cooker requires it.

  4. Heat the oil or chicken fat in the rice pot. Gently fry the garlic until fragrant, then stir in the drained rice and turmeric for 1–2 minutes. Add 700 ml broth and cook covered using the rice-cooker or saucepan method until tender. Rest covered for 10 minutes, then fluff.

  5. When the chicken is cool enough to handle, remove the meat from the bones and tear it into bite-size pieces. Discard bones safely and keep the cooked meat away from raw-poultry tools and surfaces.

  6. Toss the chicken with the red onion, rau răm, mint, lime juice, remaining 15 ml fish sauce, 8 g sugar, black pepper and 30 ml water.

  7. Serve the rice with the dressed chicken, drained pickle, cucumber and herbs. Pour the reserved hot broth into four cups and garnish with scallions and optional chili. Serve promptly. Cool leftover rice rapidly in shallow containers within 1 hour, refrigerate at or below 4°C / 40°F, use within 24 hours and reheat only once to 74°C / 165°F. Refrigerate other leftovers within 2 hours.

Practical guidance

If rau răm is unavailable, use a mix of mint and cilantro; the aroma will differ, but the salad stays fresh and herbal. Use fresh turmeric for a softer, earthy color or ground turmeric for a more even golden tint. Protect hands and work surfaces from staining. If the rice cooker needs a different liquid level, use its standard measure and keep the reserved broth separate for serving. Make the pickle ahead by up to a day and refrigerate it; drain just before serving. Use a separate clean board and knife for cucumber and herbs after handling raw chicken.

Troubleshooting

Rice is too soft: Measure the broth carefully and avoid lifting the lid while it cooks. Rice is pale: Stir the turmeric into the fat and rice before adding broth; ground turmeric gives more even color. Chicken salad tastes flat: Add lime juice in small measured splashes and toss again; do not add raw marinade. Broth is cloudy: Keep it at a gentle simmer and skim the foam instead of boiling hard.

Frequently asked questions

Can I use boneless chicken? Yes, but bone-in pieces add flavor to the broth. If using boneless pieces, check them early and cook to 74°C / 165°F without overcooking. What is rau răm? It is Vietnamese coriander, a leafy herb with a peppery, citrus-like aroma. Mint and cilantro are practical substitutes, though the flavor changes. Can I prepare parts ahead? The pickle can be made a day in advance and kept refrigerated. Cook the rice and chicken close to serving, then chill leftovers promptly using the rice-safety directions.

Allergens and food safety

Allergens and food safety

Contains chicken and fish (fish sauce). Check packaged fish sauce, vinegar and chili sauce for additional allergens or cross-contact warnings. Keep raw poultry separate from herbs, salad and cooked rice. Wash hands, tools and surfaces after handling raw chicken. Cook chicken to 74°C / 165°F in the thickest meat, measured away from bone. Check a large piece rather than relying on color or the clock. Strain broth with clean equipment and keep it hot for serving. Do not return raw-poultry utensils to cooked chicken or rice. Cool rice quickly in shallow containers, ideally within 1 hour; refrigerate at or below 4°C / 40°F and use within 24 hours. Reheat once to 74°C / 165°F. Refrigerate other leftovers within 2 hours.

Enjoy

Enjoy

  • Serve each plate with a small cup of hot chicken broth so the rice and salad can be enjoyed with a sip between bites.
  • Put the pickle and cucumber on the side to add a cool, crisp contrast to the warm turmeric rice.
