Overview

Cơm hến Huế — Huế baby clam rice

Cơm hến is a Huế rice dish built from contrasts: cool cooked rice, small clams, fragrant herbs, crisp toppings and a bowl of hot clam broth. The exact garnishes vary by cook and stall. This home version uses banana blossom, briefly blanched bean sprouts, mint, Vietnamese coriander, perilla, peanuts, sesame and pork rind, with mắm ruốc chili condiment served separately. The rice is cooled quickly and kept refrigerated until assembly, preserving the cool-rice style while following current rice-safety guidance.

Practical

Practical

  • Tips for successCook the rice ahead just enough to cool it rapidly. Spread it no deeper than 2.5 cm in a clean shallow tray and refrigerate as soon as possible. Keep the clam broth separate from the rice until serving; the hot broth is sipped or added by each diner. Buy live clams from a reputable seller. Discard cracked shells and clams that do not close when tapped; after cooking, discard any that remain closed. Prep the herbs and crisp toppings before assembling. Add peanuts, sesame and pork rind at the end so they retain their texture. Serve the mắm ruốc condiment on the side so each person can control its salty, savory flavor and chili heat.
Ingredients

Ingredients

Rice and clams

  • 300 g uncooked jasmine rice
  • 450 ml water for the rice
  • 1.2 kg live small clams in their shells
  • 750 ml water for steaming the clams; add hot water only if needed to bring the strained broth to about 600 ml
  • 25 g fresh ginger, sliced (15 g for the broth; 10 g bruised for the condiment)
  • 50 g shallots, finely chopped (35 g for the clams; 15 g for the condiment)
  • 10 g garlic, finely chopped
  • 15 ml neutral oil for the clams
  • 15 ml fish sauce
  • 1 g ground black pepper

Fresh and crisp toppings

  • 100 g banana blossom, finely shredded
  • 120 g bean sprouts
  • 20 g fresh mint leaves
  • 20 g Vietnamese coriander (rau răm)
  • 15 g perilla leaves
  • 30 g scallions, thinly sliced
  • 40 g roasted unsalted peanuts, coarsely crushed
  • 10 g white sesame seeds
  • 40 g crisp pork rind or pork cracklings
  • 1 lime, cut into wedges

Mắm ruốc chili condiment

  • 20 g fermented shrimp paste (mắm ruốc)
  • 10 ml neutral oil
  • 15 g shallot, finely chopped
  • 10 g fresh ginger, bruised
  • 10 g fresh red chili, thinly sliced; use less for milder heat
  • 8 g granulated sugar
  • About 100 ml hot clam broth, taken from the measured broth

Method

  1. Rinse the rice until the water runs mostly clear. Cook it with 450 ml water according to the package directions. Spread the hot rice immediately in a clean shallow tray, in a layer no deeper than 2.5 cm. Cool rapidly, ideally within 1 hour, then cover and refrigerate at or below 4°C / 40°F. Use within 24 hours; do not leave it on the counter to cool.

  2. Scrub the clams under cold running water. Discard cracked shells and any live clam that does not close when tapped. Keep raw clams and their liquid separate from the cooked rice and ready-to-eat ingredients. Wash hands and clean the work area after handling them.

  3. Bring 750 ml water and 15 g sliced ginger to a boil in a covered pot. Add the clams, cover and steam or boil until the shells open, about 5–8 minutes, shaking the pot once or twice. Discard clams that stay closed. Strain the broth through a fine filter; add hot water only if needed to make about 600 ml. Keep it hot. Remove the clam meat and discard the shells.

  4. Heat 15 ml oil in a wok. Cook 35 g shallot and the garlic until fragrant. Add the clam meat, fish sauce and black pepper; toss briefly until steaming hot throughout. Take it off the heat promptly so the small clams stay tender.

  5. For the condiment, warm 10 ml oil in a small pan. Cook 15 g shallot and the bruised ginger until fragrant. Dissolve the mắm ruốc in about 100 ml hot clam broth, then stir it into the pan with the chili and sugar. Bring to a gentle simmer for 2 minutes. Transfer to a small dish so diners can add it to taste.

  6. Toast the sesame in a dry pan until fragrant. Shred the banana blossom and hold it briefly in acidulated water, then drain well. Rinse the bean sprouts and blanch briefly until hot throughout; drain and chill. Rinse and dry the herbs, then tear or slice them. Crush the peanuts and break the pork rind into bite-size pieces. Keep ready-to-eat toppings covered and chilled until assembly.

  7. Divide the cold rice among four bowls. Arrange the warm clams, banana blossom, sprouts, herbs, scallions, peanuts, sesame and pork rind over the rice. Serve at once with about 150 ml hot clam broth per person and the mắm ruốc condiment on the side. Assemble just before eating; do not let the rice sit at room temperature.

Practical guidance

Make ahead: Cook and chill the rice up to 24 hours ahead. Prepare the condiment and broth shortly before serving; keep broth hot and toppings chilled separately. Serving: The bowl is meant to be assembled at the table. Sip the hot broth alongside or add a little at a time. Offer lime and chili condiment separately. Storage: Keep rice, clams, broth and toppings in separate covered containers. Refrigerate cooked rice at or below 4°C / 40°F and use within 24 hours. Use other cooked seafood promptly, within 1–2 days. Leftovers: Do not save an assembled bowl. Reheat leftover rice only once until steaming hot throughout; serve it hot rather than cold after reheating.

Troubleshooting

Rice clumps: Rinse it before cooking, then spread it in a thin layer while hot to cool quickly; separate gently with a clean fork once chilled. Clams stay closed: Discard them after cooking. Do not force them open or taste them. Broth tastes gritty: Let sediment settle briefly and strain again through a clean fine filter. Clams are tough: They were likely cooked too long after opening. Remove open clams promptly and warm the meat only briefly in the aromatics. Toppings turn soggy: Keep the broth, rice and crunchy components separate until the moment of serving.

Frequently asked questions

Is the rice served hot or cold? This version serves it chilled, which is a common presentation. Cool it rapidly and keep it refrigerated until assembly. Can I use frozen or shucked clams? Yes, if they are from a reputable supplier. Follow the package thawing instructions, cook the meat until it reaches 63°C / 145°F, and use packaged clam broth if needed; the flavor and broth yield may differ. Can I leave out the mắm ruốc? It is a characteristic savory condiment, but serving it separately lets diners omit it. The bowl will taste different without it, and the shrimp allergen will be absent only if no cross-contact occurs. Are all the toppings essential? No. Herbs and crunchy additions vary. This measured version includes banana blossom, blanched sprouts, herbs, peanuts, sesame and pork rind for a balanced mix. Can I store the assembled bowls? No. Keep the components separate and assemble immediately before eating so the rice stays safely chilled and the toppings remain crisp.

Nutrition per serving

These rounded estimates assume about 250 g edible clam meat from 1.2 kg live clams, plus the measured rice, pork rind, peanuts, oil, fish sauce and shrimp paste divided among four bowls. Clam yield, broth salinity, condiment brands and how much condiment is added can shift the values substantially.
