Bún riêu cua (Vietnamese Crab and Tomato Noodle Soup)
Bún riêu cua is a Vietnamese rice-vermicelli soup known for its gently tangy tomato broth and soft crab topping. This practical northern-style home version uses pasteurized crab meat and seasoned crab paste in place of fresh field crab, then sets the mixture with egg into tender curds. Fried tofu, herbs and lime make each bowl lively and filling. Recipes vary by household and region, so this is one coherent version rather than a fixed formula.
In the classic broth, freshwater paddy crab is pounded and strained so its flavor can enrich the soup. Home versions vary: some use fresh crab, while others combine seasoned crab paste with crab meat and egg to make soft riêu. Tomatoes bring a sweet-sour note, and tofu and rice vermicelli turn the broth into a full meal. Fermented shrimp paste is a familiar seasoning, though the amount and whether it is cooked into the pot or offered separately can differ.
This recipe uses refrigerated pasteurized crab meat and a small amount of seasoned crab paste, which makes the technique accessible when fresh cua đồng is unavailable. It does not claim that prepared crab tastes exactly like freshly strained field crab. The curds are cooked gently and left undisturbed so they set in broad, tender pieces instead of breaking apart.
