Bánh đúc nóng (Hanoi warm savory rice-flour cake)
The Hanoi version is associated with a rice-based batter stirred on the stovetop until smooth and pliable. Households and vendors vary the flour blend, topping and dressing. This practical home version combines rice flour and tapioca starch for a gently elastic, spoonable texture; the pork-and-mushroom topping and tangy dressing balance its mild flavor. It is distinct from cold bánh đúc lạc and from southern savory bánh đúc variations.
Soak the wood-ear mushrooms while you mix the batter. Stir the batter continuously over low heat so it thickens evenly without scorching, and cook the pork topping separately. Spoon the warm cake into bowls, add the topping and dressing, then finish with fried shallots and coriander.
