Bánh xèo tôm nhảy Bình Định — crisp shrimp rice pancakes
Bánh xèo tôm nhảy is a small, crisp shrimp pancake associated with the Bình Định region, especially the Mỹ Cang area. The name refers to the very fresh shrimp that cooks traditionally place into the hot pan. In a home kitchen, use fresh or properly thawed refrigerated shrimp and cook them through; their freshness should never be judged by whether they are still moving. The local format differs from larger, richer southern bánh xèo: these are palm-sized, lightly turmeric-tinted rice pancakes with shrimp, sprouts and scallion.
The batter here uses rice flour and water, without coconut milk, for a delicate shell that can crisp around the edges. Thirty minutes of chilling hydrates the flour and lets it settle; stir before each batch so the pancakes stay thin. A 12–15 cm skillet gives the batter a manageable size and helps each cake cook evenly. Pouring batter into a properly hot, lightly oiled pan creates the characteristic sizzle, but control the heat after that first contact: too much heat browns the bottom before the shrimp and sprouts are ready.
The accompaniments balance the hot, crisp pancake with cool lettuce and herbs, cucumber, tart green mango, green banana and starfruit. Rice paper makes it easy to wrap a bite, though diners can also use lettuce leaves alone. A fish-sauce dip with lime, garlic and a little sugar ties the plate together. Herb combinations vary; keep the fruit and greens crisp and serve them separately so everyone can make a wrap to taste.
