How to Make Smooth, Creamy Keşkül
Keşkül belongs to Türkiye's broad family of milk puddings, yet ground almond gives it a character distinct from plain muhallebi or rice-grained sütlaç. The almond should be present in every spoonful without making the pudding gritty or oily. Finely ground blanched almonds disperse best, and a modest amount is enough to perfume the milk while preserving its pale colour. Desiccated coconut is optional, but its quiet sweetness is familiar in many contemporary versions.
This recipe uses rice flour and cornstarch together. Rice flour provides a soft, slightly rounded body; cornstarch supplies predictable thickening without requiring a large quantity. The combination is practical rather than an invitation to make the pudding rigid. Keşkül continues setting as it cools, so the hot mixture should pour in a thick ribbon and coat a spoon. If it already stands in peaks in the saucepan, it will become heavy and pasty in the refrigerator.
The safest route to a smooth result is to disperse both thickeners in cold milk. Dry starch added to hot liquid forms sealed lumps whose centres never dissolve. Whisk the cold slurry until no powder remains, warm the almond milk separately, and pour the slurry in gradually while whisking. Once thickening begins, exchange the whisk for a flexible spatula periodically so the entire base and corners of the pan are scraped clean.
Heat control matters because milk solids and ground nuts scorch readily. Medium-low heat gives the starch time to swell before the base catches. A gentle bubble for several minutes removes the raw flour taste; violent boiling is unnecessary and can make the texture less refined. Vanilla goes in after the pan leaves the heat so its aroma is not driven away.
Serve keşkül cold in small individual bowls. Pistachio, walnut, coconut and pomegranate are all plausible finishes, but they need not appear together. One nut garnish or a few bright arils give contrast without burying the almond base. Add crunchy garnishes only before service, especially if the bowls were prepared a day ahead, and state all tree nuts clearly for guests with allergies.
