Ceviche Norteño — Sullana Sharing Platter: Cabrilla and Cooked Shrimp with Piura-Inspired Sides
For a larger table, this northern-coast-inspired ceviche combines cabrilla with shrimp that have already been fully cooked and chilled. That is a practical celebratory serving arrangement, not an assertion of a customary Sullana holiday recipe. The base remains lime, ají limo, onion and cilantro.
Zarandaja, chifles and soft cooked camote turn the platter into several contrasting mouthfuls. The shrimp are not relied upon to cook in acid: buy them ready-cooked from a reputable supplier and keep them cold until serving. The fish component, by contrast, remains raw.
Put sides into separate sections of the platter, then dress and add the seafood immediately before serving. The larger quantity requires a wider chilled bowl and a careful fold rather than vigorous mixing, which can tear both shrimp and fish.
