Ceviche Norteño — Sullana Zarandaja and Chifles: Cabrilla with Zarandaja, Toasted Maize and Chifles
The northern coastal table connects fish ceviche with zarandaja beans, toasted maize and chifles. This Sullana-labelled recipe draws on those documented Piura-area ingredients but does not claim a standardized formula from the city. Firm cabrilla keeps the emphasis on the citrus-dressed fish.
The two maize-and-plantain crunches are not interchangeable: cancha is toasted maize, whereas chifles are fried green-plantain slices. Fully cooked zarandaja adds a soft, starchy contrast. Plating the three sides separately preserves their different textures.
Ají limo and cilantro are folded into the fish just before fresh lime juice. The cold contact should be brief and controlled: opaque-looking edges are only a texture cue, never proof that parasite or bacterial hazards have been eliminated.
