Poulet de Loué à la crème with Jasnières and mushrooms
Poulet de Loué is tied to Loué and the Sarthe poultry tradition, and the named bird is central to this preparation. The sauce is built around Jasnières, a local white wine, mushrooms and onions before crème fraîche and egg yolks finish it. That combination makes a clear Sarthe line rather than borrowing the litre-of-cream profile associated with Poulet de Bresse.
The chicken is lightly dusted with flour and browned in a mixture of olive oil and butter. Jasnières is then reduced before the chicken returns for a gentle braise. The small white onions stay whole, while sliced onion and mushrooms give the sauce body. The poultry must reach 74 °C in every thick piece before it is moved out for the final liaison.
The liaison is the most sensitive step. Crème fraîche, egg yolks and cornstarch are first mixed cold, then tempered with hot sauce. Once returned to the casserole, the sauce is heated gently to 71 °C and must not be allowed to boil hard. This both cooks the egg component and keeps the sauce smooth.
