  3. Bake the fiadone. Pour into the mould and bake at 180 °C for about 40 minutes. Time: 40 minutes. Temperature: 180 °C. The egg sets the crustless cheese cake while the Brocciu stays moist. Verify at least 71 °C in the coldest central point. The surface is dark golden-brown, the centre is set without looking dry, and the coldest central point reaches at least 71 °C.

  4. Cool on a rack. Set the tin on a rack and cool for 60 minutes. Time: 60 minutes cooling. The cake has stopped steaming, pulled only slightly from the side, and can be moved without a liquid centre.
