Wątróbki gęsie po siewiersku is a Siewierz specialty from Poland's Silesian Voivodeship. The Ministry of Agriculture's traditional-product record describes irregular goose-liver pieces cooked with goose fat and pepper, and says they are most often served with roasted apple. Local accounts connect the dish with geese raised on small farms around Siewierz.
This measured home version serves the liver with toasted buckwheat, browned onion and tart apple. Older cookbook methods describe soaking liver in milk and cooking it with onion in fat; a contemporary Silesian presentation also pairs it with buckwheat. The cut size follows the traditional record's 2.5–3 cm pieces. Goose liver has a rich, delicate texture, while apple adds sweetness and buckwheat brings a nutty contrast.
The traditional-product description mentions a red interior, but poultry liver can carry pathogens inside. For a safe home recipe, cook every piece to 74 °C throughout and verify with an instant-read thermometer; color is not a safety test.
