Lasowiacka Sauerkraut and Barley (Kapusta z kaszą jęczmienną po lasowiacku)

The registered dish comes from Górki in the Lasowiacka cultural area of Podkarpackie. Its official description emphasizes a beige color, sour taste and fermented-cabbage aroma. Cabbage and groats also appear together in regional food references.
The LPT entry does not give measured quantities or a full method, so this four-serving recipe is a practical home adaptation, not an exact registered household formula. It keeps the defining pairing simple and does not combine it with the separate Lasowiacka kapusta z zasypką, which includes bacon and beans.
Serve it as a satisfying vegetarian main or alongside separately prepared pork knuckle, duck or ribs, as the regional entry suggests. Barley contains gluten; taste the sauerkraut before adding salt because its brine varies by maker.
