About the sausage

Kabanosy Staropolskie Trail Snack Box

Kabanosy staropolskie is a traditional finished product whose registered method includes smoking and controlled drying. This recipe uses the packaged ready-to-eat sausage as an ingredient; it does not give home curing or drying directions. Use the protected name only for a product whose packaging substantiates the TSG designation.

Tips for a better snack box

Tips for a better snack box

  • Check that the package says ready-to-eat. Do not use sausage labelled “cook before eating” for this no-cook recipe.
  • Follow the package’s storage instructions before and after opening; dry sausage products do not all have the same storage requirements.
  • Cut the apple just before packing to help keep it fresh. Pat the pickles dry so they do not soften the bread.
  • Pack mustard separately and keep moist and dry components in separate compartments.
  • If the package says to refrigerate, or the prepared fruit and pickles will be carried for a while, use an insulated cooler with an ice pack.

Ingredients

Kabanosy snack box

  • 200 g commercially packaged Kabanosy staropolskie, labelled ready-to-eat; choose a certified TSG product where available and follow its storage directions
  • 120 g wholegrain rye bread, cut into portable pieces
  • 160 g crisp apple, washed, cored and sliced
  • 120 g pickled cucumbers, drained and cut into sticks
  • 20 g prepared mustard, portioned separately; check the ingredient and allergen label

Directions

  1. Check the sausage labelConfirm the product name, use-by date, storage directions and handling statement. Use only sausage labelled ready-to-eat. Set aside any product that says it must be cooked before eating.

  2. Prepare the fruit and picklesWash the apple under running water and dry it. Core and slice it shortly before packing. Drain the pickled cucumbers and cut them into sticks. Use clean equipment and keep the ready-to-eat sausage away from raw meat and unwashed produce.

  3. Portion the bread and sausageCut the rye bread into four 30 g portions. Weigh 50 g of kabanosy for each snack. Leave the casing on unless the package says otherwise; if you prefer shorter pieces, cut the sausage with a clean knife on the clean board.

  4. Pack four portionsAdd 40 g apple and 30 g cucumber to each portion. Measure 5 g mustard into a small lidded cup for each person. Keep the moist ingredients and mustard separate from the bread so it stays firm.

  5. Keep the snack at the right temperatureFollow the package after opening. If the sausage label requires refrigeration, or if any prepared component is perishable, carry the portions in an insulated cooler with an ice pack. Refrigerate perishable foods within 2 hours, or within 1 hour when the temperature is above 32.2 °C / 90 °F.
