  1. Boil and cool the first potatoes.Put the peeled 650 g potatoes in a saucepan and cover with 2 L water. Bring to a boil and simmer until a knife slips easily through the centers, about 18–22 minutes. Drain, mash or rice without liquid, and spread on a tray to cool for 20 minutes. Weigh about 500 g for the recipe.

  2. Render the cracklings.Dice the smoked pork belly into 5 mm pieces. Start it in a cool skillet over medium-low heat and render for 10–15 minutes, stirring, until browned and crisp. Lift out the cracklings and reserve both them and the fat. Cook the pork thoroughly. Wash your hands, knife, board and utensils after handling raw pork, and keep it separate from ready-to-eat foods.

  3. Grate and press the raw potatoes.Finely grate the 750 g raw potatoes. Transfer them to a clean cloth over a bowl and squeeze firmly. Let the expressed liquid stand for 10 minutes until the starch settles. Pour off the clear liquid carefully and scrape the potato starch back into the grated potatoes.

  4. Mix the potato dough.Add the cooled 500 g mashed potato and 5 g salt to the grated potato mixture. Mix thoroughly until evenly combined. It should hold together when pressed with a spoon. If it remains very wet, squeeze it again rather than adding flour.

  5. Shape the dumplings.Bring 3 L water and 8 g salt to a full boil in the stockpot, then lower it to a steady simmer. With two damp tablespoons, shape small round or oval spoonfuls about 3 cm across and lower them into the water in batches. Do not crowd the pot.

  6. Boil until cooked through.Once the water returns to a gentle boil, cook each batch for 8–10 minutes, adjusting the heat to prevent a hard boil. Lift one dumpling and cut it open: it should be uniformly soft and fully cooked through, without a chalky raw center. Remove the batch with a slotted spoon and drain well.

  7. Toss with the cracklings.Transfer the hot dumplings to a warm serving bowl. Spoon over the reserved rendered fat and cracklings, fold gently, and serve immediately. You can also serve the dumplings beside a braised meat dish.
