Sopa teóloga with turkey, bread and festive accompaniments

Sopa teóloga is linked with Moche in La Libertad and also known locally as boda de Moche. The elaborate community and festive service encompasses more than a single pan of soup: bread-seasoned broth, poultry, goat, pepián and finishing accompaniments have all been recorded together.

A modest home kitchen cannot reproduce every local ceremonial service in exactly the same way. This carefully described home-scale meal keeps the bread-thickened turkey broth and makes small, separate goat and rice components, rather than reducing the identity to a generic turkey soup.

Work in an orderly sequence. Cook poultry to its verified safe temperature, simmer goat until tender, prepare the rice component, then thicken the soup with bread soaked in milk. Bowls should carry a generous spoon of broth with visible turkey and measured accompaniments rather than a uniform purée.

Ingredients

Ingredients

Turkey broth

  • 700 g bone-in turkey pieces — thawed; about 450 g cooked edible meat
  • 1800 ml water — for turkey broth
  • 150 g carrot — sliced
  • 90 g celery — chopped
  • 110 g leek — washed and sliced
  • 2 g dried oregano
  • 7 g salt — 4 g for broth, 3 g for other components

Bread and sofrito

  • 250 g day-old white bread — torn up
  • 300 ml whole milk
  • 160 g red onion — diced
  • 15 g garlic — crushed
  • 140 g tomato — diced
  • 30 g ají amarillo paste
  • 30 g sunflower oil — 20 g for soup, 10 g for rice

Goat and serving

  • 400 g goat shoulder — boneless cubes
  • 220 g white rice — uncooked, rinsed
  • 500 ml water — for rice pepián
  • 4 g ground cumin
  • 4 g ground turmeric — colouring for rice component; not called local saffron
  • 4 large eggs — raw, in shell; about 50 g edible egg per egg after boiling and peeling
  • 1000 ml water — for boiling eggs; discarded afterward
  • 80 g black olives — pitted, drained
  • 20 g flat-leaf parsley — chopped

Method

  1. Make the turkey stock.Simmer turkey, carrot, celery, leek, oregano, 4 g salt and the 1800 ml water in a covered large pot for about 75 minutes. Remove turkey and strain, reserving broth. The turkey pulls apart at the joints and the broth is fragrant. Measure 74 °C in the thickest turkey meat away from bone.

  2. Simmer the goat shoulder. In a second pot simmer goat pieces in 400 ml of the reserved broth for 70 minutes until they yield to a fork; keep the remaining broth for the soup. A fork slides into a goat cube and the liquid has reduced. Cook thoroughly; do not use colour as a safety check.

  3. Soften bread in milk.Soak torn bread in milk for 10 minutes, then mash to a soft slurry. No dry bread cores remain. Refrigerate if preparing ahead.

  4. Concentrate the sofrito.Heat 20 g oil in a frying pan and cook onion, garlic, tomato and ají paste for 12 minutes until concentrated. The sauce is shiny, and onion and tomato have lost their raw sharpness.

  5. Thicken the bread soup.Whisk softened bread and sofrito into 950 ml of reserved turkey broth; simmer and stir for 18 minutes. The soup coats a spoon while remaining pourable. Keep the bread mixture moving to prevent catching.

  6. Cook the rice pepián.Crush rice lightly, then combine it with 500 ml water, turmeric, cumin, 10 g oil and remaining 3 g salt. Simmer covered 23 minutes. The rice is tender and thick enough to mound lightly.

  7. Prepare the firm eggs.Put the four raw eggs into a small saucepan with 1000 ml fresh water. Bring to a boil over medium-high heat, about 5 minutes, then boil gently for 10 minutes. Rinse under cold running water and peel. The whites are set and the yolks are firm. Cook eggs until both whites and yolks are firm; use clean hands and utensils to peel.

  8. Assemble the festive bowls.Debone and divide the turkey among four bowls with goat, a spoonful of rice pepián and soup; finish each bowl with one sliced hard-boiled egg, olives and parsley. Each of the four bowls has separate components with thick yet ladleable broth. Serve hot and refrigerate leftovers promptly.

Practical

Practical

Success points

The broth remains ladleable while separately cooked meats and pepián retain their identity.

Practical guidance

This home-scale serving follows the multi-component identity of Moche but should not be taken as a complete documentary recreation of a wedding service. Local preparations differ greatly in the number and arrangement of components. Keep the soup, meat and rice warm separately until plating. If the bread mixture grows too thick, loosen it with reserved hot broth rather than dilute the entire dish with unlisted water. The soup and meats can be prepared a day ahead and chilled promptly. Reheat every cooked component to 74 °C and assemble fresh eggs, parsley and olives just before eating.

Control points

Control points

  • The bread soup forms lumpsThe soaked bread was not fully broken down or was added without whisking. Blend or mash the slurry before it meets the hot broth.
  • The rice pepián is soupyIt has too much free liquid. Continue gentle simmering, uncovered, until it mounds softly on a spoon.
