Escribano Arequipeño: Crushed Potato, Tomato and Rocoto
Escribano arequipeño is a small potato preparation associated with Arequipa’s picantería repertoire. The base is cooked potato, dressed with tomato, rocoto chilli, vinegar and oil. Despite its name, the dish is better explained through its ingredients and method than through an unsupported tale about a particular profession.
Its texture is distinctive: potatoes are roughly pressed with a fork rather than blended into a smooth mash. Pieces of potato hold the dressing in their cracks while diced tomato releases a little juice. The rocoto contributes a strong, fruity heat; removing seeds and pale ribs moderates, but does not remove, that heat.
The key is to dress potatoes while warm enough to take on the oil and vinegar, then add the tomato so it stays fresh. A relatively small amount of vinegar keeps the plate tart without turning the potatoes wet. No cheese or mayonnaise is required for this defined preparation.
