About Brovada e muset
Turismo FVG describes Brovada DOP as fermented turnips and muset as the Friulian pork sausage that forms its best-known pairing.
The regional recipe cooks brovada slowly with onion, garlic, lard and bay while the muset is soaked and simmered separately.
Brovada’s fermentation is a protected production process. A home cook should buy prepared Brovada DOP rather than trying to reproduce the controlled fermentation ad hoc.
Long gentle heat softens the sour turnip shreds and cooks the sausage without bursting its casing. The two components meet only on the plate.
