Ti-nain morue — Martinican green bananas with salt cod
Ti-nain morue pairs two ingredients that should remain distinct on the plate: starchy green bananas and salt cod. The bananas are genuinely green cooking fruit, boiled until tender but still intact, while the fish begins as dry-cured cod that must be desalted under refrigeration. Ripe sweet plantain or fresh cod would produce a materially different dish.
Desalting is the main planning task. The cod spends 24 hours at 4 °C or colder under fresh water with three hygienic water changes. After draining, it is checked carefully for skin and bones, then gently poached until the thickest piece reaches 63 °C and flakes moistly. Green bananas cook separately so their starch stays clean and they do not dissolve into the fish.
A sharp mustard-lime vinaigrette, thin onion, parsley, cucumber and avocado provide acidity and freshness around the warm cod and banana. Sodium is necessarily an estimate because salt retention in cured fish varies with cut thickness, cure and water changes. The stated figure assumes the full 24-hour refrigerated soak and an expected rehydrated drained cod weight of about 850 g.
