Montréal Smoked Meat Sandwich

Montréal smoked meat is cured, seasoned and smoked beef brisket associated with the city's Jewish and Eastern European deli heritage. The whole brisket process takes days; this practical recipe assembles the classic sandwich from fully cooked deli meat, gently steamed and piled high on rye with yellow mustard. Serve with a dill pickle. This is a sandwich recipe, not a home curing method.

Practical

Practical

  • Arrange the slices loosely so hot steam can circulate.
  • Medium-fat slices make a juicier stack; lean slices are drier.
Ingredients

Ingredients

Sandwiches

  • 600 g fully cooked Montréal smoked meat, chilled and thinly sliced
  • 8 slices (about 320 g) light rye bread
  • 40 g yellow mustard

To serve

  • 4 small dill pickles, whole or halved

Method

  1. Step 1Pour 2–3 cm water into a large pot. Set a steamer basket above the water and bring it to a gentle simmer; water must not touch the basket.

  2. Step 2Arrange the chilled meat loosely in the basket, cover and steam for 6–10 minutes, turning once, until hot throughout. Check the centre of a thick stack with a clean digital thermometer; it must reach 74°C. Steam in batches if needed.

  3. Step 3Spread mustard on one side of each bread slice. Divide the hot meat among four slices, pile it high without compressing, then cap with the remaining bread.

  4. Step 4Cut in half if desired and serve immediately with a dill pickle. Keep unused meat refrigerated according to the package directions.

Serving

Serve at once while the meat is hot and tender. A dill pickle is classic; fries or coleslaw are optional deli-style sides.

Make-ahead

Keep ready-to-eat smoked meat refrigerated and follow the package date and opened-product instructions. Refrigerate perishable food within 2 hours at or below 4°C. Discard cooked food left at room temperature for more than 2 hours.

Storage and reheating

Steam only the amount of meat to be served, until its centre reaches 74°C. Assemble sandwiches after reheating; do not reheat a fully assembled sandwich.

Control points

Control points

  • The meat dries out: use a gentle simmer, steam only until hot and check the temperature.
  • The meat cools before serving: warm the bread briefly and assemble as soon as the meat reaches 74°C.
  • The sandwich is too salty: choose a lower-sodium product if available and do not add salt.

FAQ

FAQ

Can I make the smoked meat from raw brisket with this recipe?

No. This recipe assembles sandwiches from fully cooked, ready-to-eat meat. Traditional brisket is cured, smoked and steamed over several days; home curing requires a separately tested formula and precise controls.

Should I choose lean or medium-fat meat?

Either works. Lean brisket is drier; medium-fat slices are juicier. Choose what you prefer and follow the seller’s instructions.
