Ibaya is a fine-dining restaurant inside Sport Hotel Hermitage & Spa in Soldeu, led by chefs Francis Paniego and Jordi Grau. Its current menus use the landscape, seasons and food traditions of Andorra as a starting point, then reinterpret them through a multi-course format. The hotel’s published menus include two journeys: “A Walk Around Andorra” and “A Walk Through the Incles Valley,” with dishes such as winter escudella, snails, mountain ramen, chicken with prawns and desserts using local honey or pine nuts. Ibaya holds one Michelin star and is presented by the hotel as open year-round, although meal hours and seasonal operations should be confirmed before booking.

The restaurant is located at Carretera General 2, within the Sport Hotel Hermitage complex in Soldeu. The hotel stands beside the Grandvalira ski area, with village services and mountain access close by. Ibaya is one of the hotel’s gastronomic restaurants rather than a separate street-front café. Guests should follow their reservation confirmation to the correct entrance and avoid confusing Ibaya with Koy Hermitage, Tradició Grill, Hermitage Tradició or other dining rooms in the same resort. Reservations are listed through the hotel concierge at +376 870 670 or concierge@sporthotels.ad.

The current online menu gives the restaurant’s clearest sense of place. It frames its cooking through the annual cycle of winter snow, spring shoots, summer growth and autumn harvest, alongside older practices of preserving meat, preparing sausages, storing potatoes and using seasonal produce. The menu names winter escudella, spring snails cooked “a la llauna,” summer trumfa and an autumn mushroom tartlet. These are not a checklist of fixed signature dishes; the menu connects ingredients to the conditions that shaped mountain cooking and may change as seasons and availability change.

Two tasting menus provide different routes through the same landscape. “A Walk Around Andorra” includes a bread course made with locally sourced flour, a section on territory and ingredients, and dishes that may include chicken with prawns, tripe, mountain ramen, baby squid with onions or venison with beetroot. “A Walk Through the Incles Valley” shares some elements while offering its own sequence, including Catalan-style pigeon and a local festival dessert based on anise and pine-nut coca. The hotel’s menu page permits two diners at the same table to choose different menus, which can help couples or small groups compare the two themes.

Prices are substantial and should be checked at the time of reservation. On the menu page reviewed, the Andorra menu was listed at €195 and the Incles Valley menu at €175, with Andorran IGI included. Those are current displayed amounts, not a promise that the prices will remain unchanged. The published menu is a long, multi-course meal rather than a quick dinner before an early departure. Allow enough time for the full progression, and ask the restaurant about the expected duration if you have a lift, transfer or other fixed commitment afterward.

Ibaya describes its approach as a meeting between contemporary creativity and inherited food traditions. The menu references the Encamp House-Museum and everyday practices such as making bread, preserving food and using locally available ingredients. That connection grounds the meal in the cultural history of the Principality rather than presenting Andorra only as a ski destination. The restaurant also acknowledges that some ingredients travel into the valley from elsewhere; its stated aim is to mark the territory through how products are used, not to claim that every component is local.

The meal is best suited to visitors who want a planned gastronomic experience and are comfortable with a set tasting-menu structure. The current page does not establish a full à-la-carte choice, so ask when booking whether alternatives are available. It says two different menus may be combined at one table, and the menu contains a range of animal, fish and plant ingredients. Guests with allergies or dietary restrictions should contact the restaurant before arrival rather than assuming that substitutions can be made at the table.

Hours differ slightly between sources. The hotel’s Leading Hotels of the World page lists dinner Tuesday through Friday from 20:00 to 22:00, with Saturday lunch 13:00–15:00 and dinner 20:00–22:00; it shows Sunday and Monday closed. Tripadvisor lists a 19:30 dinner start Tuesday through Friday, the same Saturday lunch period, and Sunday and Monday closed. The official hotel restaurant page says Ibaya can be enjoyed year-round, while Tripadvisor notes a spring closure in its description. Treat the 30-minute dinner-start difference and seasonal statement as items to confirm with the restaurant when making a reservation.

Soldeu is a high-altitude resort village, and winter travel can involve snow, traffic and changing lift schedules. A dinner reservation at Ibaya is separate from the operating times of Grandvalira lifts or hotel facilities. If arriving by car, use the hotel’s parking instructions and do not assume a restaurant reservation automatically includes valet parking. The Tripadvisor profile lists valet parking, reservations and table service, but exact terms should be confirmed with the hotel. The sources reviewed do not specify dress code or seating duration for Ibaya, so ask directly if either affects your plans.

To plan the visit, choose the menu that best matches your interest in the wider Andorra or the Incles Valley, check the current price and dietary options, and confirm the reservation time with the concierge. Ibaya’s value for visitors lies in the way its menu links seasonal mountain ingredients and regional memory to a structured meal. The important practical limitation is timing: the restaurant is not a casual all-day service, published start times differ, and spring operation may vary. Confirm the meal date and arrival details rather than relying on an older listing or assuming hotel-wide dining hours apply.
