The fall of the Anatolian Seljuks \u201cmarked the beginning of the Ottomans,\u201d whose vast empire connected Europe, the Middle East and North Africa. The sultans created magnificent palace kitchens in Istanbul (Topkap\u0131 Palace) and elsewhere, staffed by hundreds of specialist chefs. These cooks constantly sought new flavors and variety, so that Ottoman cuisine \u201cbecame a place to look for a variety of tastes, and [this] contributed to enrichment of Turkish cuisine\u201d. Dishes we now consider traditional \u2013\u202fpilafs with nuts, layered <em>baklava<\/em>, stuffed vegetables, rice-stuffed vine leaves (<em>dolma<\/em>), <em>\u015fi\u015f kebab<\/em> and many others \u2013 were refined in these imperial kitchens. The Ottomans also introduced New World crops (tomatoes, peppers, potatoes) and took advantage of fruits, nuts and spices from across their realm. At day\u2019s end he drank strong Turkish coffee; in holy months like Ramadan, extended feasts included lamb stews and sweets shared with neighbors, all reflecting early Turkish hospitality. Palace chefs competed to present exotic dishes to the Sultan and court; as one history notes, the palace kitchen\u2019s goal was endless \u201cvariety of tastes\u201d. Classic dishes took shape: <em>H\u00fcnkar Be\u011fendi<\/em> (eggplant pur\u00e9e with lamb stew) came from this era, as did the layered phyllo baklava perfected in royal confectioneries. Coffee became a courtly drink: accounts describe sultans receiving guests over cups of rich <em>qahve<\/em> and spiced sherbets.<\/p><p>Meanwhile, the Ottomans\u2019 many provinces sent their own fare to the capital. The influence of Armenian pastry chefs introduced <em>dolmas<\/em> and <em>sarma<\/em> (stuffed vegetables and vine leaves); Balkan and Middle Eastern cooks contributed desserts like <em>lokum<\/em> and spice blends. In short, the Ottoman period did not create Turkish cuisine out of nothing \u2013 it refined and unified it.
