No se trata de mezclar todos los ingredientes desde el principio: si entra demasiada agua antes del agitado, el aire queda repartido en una fase demasiado grande y la espuma pierde fuerza.<\/p><p>El caf\u00e9 soluble atomizado suele producir una espuma m\u00e1s fiable que los cristales grandes liofilizados. Sus part\u00edculas se disuelven con rapidez y liberan compuestos que estabilizan el aire incorporado. Esto no significa que cualquier caf\u00e9 soluble funcione igual; conviene probar una marca y conservar la proporci\u00f3n que d\u00e9 una capa firme. El agua debe estar muy fr\u00eda, tanto en el concentrado como en la parte que completa el vaso.<\/p><p>La versi\u00f3n m\u00e9trios lleva un dulzor medio.
